If the peppers in your refrigerator are getting wrinkled, but not moldy, wrap each unwashed pepper loosely in a dry paper towel and place in a partially opened zip lock plastic bag in the crisper. The peppers let off a small amount of moisture while they sit. When the condensation forms it clings to the pepper’s surface creating a buffer so they will stay firm longer. Another method is to soak peppers in a bowl of ice cold water for 15-20 minutes. The cold water will rehydrate the peppers.
