I know Thanksgiving is behind us, but if you need to peel potatoes easily for the next feast or just a regular meal try this: boil the potatoes, with the skin on, for 20 minutes or until a toothpick can be inserted easily into them. Remove from the water and slice in half. Place a baking cooling rack over a large bowl. Rub the potatoes over the rack. The skins will fall off and will be caught in the bowl!
