This Summer tip bears repeating: store your ice cream container upside down in your freezer to avoid freezer burn. It works because when melted ice cream refreezes ice crystals form due to the air that has gotten into the container. By turning the container upside down, it lets the melted portion settle against the lid rather than on top of the unfrozen ice cream where the air hits it. This way, as it refreezes a tighter seal is formed so the texture will stay smooth.
