If you and your family consume eggs on a regular basis then the normal storage will work for you. However, if you don’t eat regularly or bake with them, you’ll want them to last a lot longer. Skip the egg compartment in your refrigerator. The door is typically less cold then the interior because of all the opening and closing. Instead freeze your eggs! Not n the shell because they can explode! UGH! Whisk whites and yolks together and place in ice cube trays. When needed, pop out what you need. To prevent graininess after defrosting, if you are baking with them, add 1 tablespoon of sugar per cup of whole eggs. If you are scrambling or making a favorite dish, add 1/2 teaspoon of salt. Eggs generally last for about 3 weeks after purchasing. To test for fresh eggs, place in a bowl of water, if it floats, it’s older, you should toss it because it means the liquid has evaporated.
