Zesting a fruit is the act of scraping or cutting away the thin, colored outer skin layer of a citrus fruit. Many recipe’s ingredients ask for this. Usually, the fruit rolls around during the process slipping and sliding making it a difficult task. Try putting the fruit in the freezer for about 15 minutes before zesting. This brief chill firms the peel plus the zest comes off in fine, fragrant pieces instead of mush! This is a bonus because the peel hold more of the natural citrus oils resulting in better flavor in your cookies, cakes, muffins, and marinades.
