If that bunch of bananas isn’t ripening fast enough for you to bake with them, place the bananas, with the peels on, on a baking sheet and bake at 350° for about 5 minutes until the peel darkens. The heat releases the ethylene gas in the banana so it will be sweet and soft. Now you can peel, mash and bake muffins, pancakes, and bread!
