Tip of the Day: Squash Hard to Peel?

Butternut and acorn squash can be very hard and sometimes dangerous to peel. Save you fingers and muscles by poking a few holes in the veggie with a fork. Wrap your squash in a dish towel and microwave for about 3 minutes. When it is slightly cooled off, peel and cut as per your recipe. You will have saved some cooking time too because the squash is partially cooked!
