Tip of the Day: Bake Cake Layers Without Peaks
To bake flat cake layers without center domes that can make your cake wobble, do what the experts do: cut 1/2″ strips from an old dish towel. Now, dampen with water and wrap a strip around each pan. Secure with a safety pin. Bake as usual. The wet fabric will lower the temperature of the pan so the cake’s edges don’t set before the center does. You’ll get perfectly flat layers every time!
