There is a science to selecting the correct eggplant for your recipes. The fewer seeds they have the sturdier slices. How can you tell? Easily! Look at the bottom of the veggie. If there is a small round dot it will be juicier and have fewer seeds. If it has a horizontal line not only will it have more seeds but will be soggier and not cook as well in your recipe.
