When there’s a sale on cheese don’t hesitate! There are several ways to keep it fresh until you’re ready to consume it. First, keep it in it’s original packaging, fresh-cut too, if it will be eaten in a few days. If not, remove the wrappings and re-wrap with wax paper or parchment paper. This allows it to breathe. Now wrap in plastic (this contains the odor) and refrigerate. This will work for hard and soft cheeses. If you want to save for the future, you can freeze cheese by placing hard cheese in plastic wrapping a freezer bag. To defrost, leave in the fridge overnight. If you freeze a soft cheese, like Brie, it will be best used for cooking as the texture will change. For sliced cheeses, place a piece of parchment paper in between each layer before placing in a freezer bag.
