Tip of the Day: Caramelize Onions in a Jiffy
If you love caramelized onions on burgers or steak, but hate the time it takes to get them into your salivating mouth, add 1/4 teaspoon of baking soda per pound of onions as they cook. This will raise the pH of the onions to speed up the chemical reaction that turns them brown. It will be less time until you sink your teeth into that burger!
