If you are making roasted chicken, but are worried the white meat will be too dry, apply an ice pack to each breast for 1 hour before cooking. When you lower the temperature like this it ensures that the breasts will cook at the same rate as the dark meat. You will get juicy, tender, perfect chicken every time. Yum!
