Tip of the Day: Tenderize Kale Easily

Everyone hears the virtues of kale but it can taste tough or bitter. An easy way to ensure your fresh salad is delicious and tender, as you embark on your New Year’s resolutions to eat healthy, is to combine a bunch of kale that has the stems removed with 3 tablespoons of olive oil, 2 tablespoons of lemon juice, and salt and pepper in a standing mixer. Using the paddle attachment mix on low for a minute or so to break down the tough fibers. Bon appetite!
