Tip of the Day: Care for Cast Iron Pots & Pans

I used to shy away from cast iron pots and pans because they tended to get rusty. I’ve found some solutions to prevent this and to make this healthy cookware last longer. First of all, do wash with soap and water. You won’t have to worry about washing away the cooked-in flavor or patina. In reality, the seasoning on these pans isn’t from cooking but from a thin layer of polymerized oil that’s bonded to the pan’s surface. Soap will not affect it, just DO NOT let it soak. Wash, rinse,and dry! After washing, reseason by adding cooking oil spread evenly with either a paper towel or brush. Then, heat on the stovetop until you see some smoke. Remove and rub again. The more you cook with cast iron pots and pans the seasoning improves.
