If you like to shape your meatballs just about the same size for easy, evenly cooking, I have a suggestion. Instead of collecting the meat and judging that each handful is the same, roll the prepared meat mixture into logs. Using a knife, cut 12 equal slices. Then roll these slices into balls. They should all be somewhat uniform in size. Depending on the size of your crowd, you may need to make several logs.
