Tip of the Day: Baking Soda Speeds Up Caramelize Onion Cooking Time
If you like the taste of caramelized onions, but don’t make them often because they take too long to cook, you can slash the cooking time by adding 1/4 teaspoon of baking soda to each pound of onions you are cooking. The baking soda lowers the pH to help speed up the chemical reaction that causes the browning so they should be ready in about 15 minutes as opposed to 45 minutes.
